Beef and Vegetable Stir-Fry

Ingredients:

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp sesame oil or vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 1 tsp ginger, grated
  • 2 tbsp hoisin sauce (or teriyaki sauce for extra flavor)
  • 1 tbsp sesame seeds (optional)

Instructions:

  1. Marinate beef slices in soy sauce for 5 minutes.
  2. In a large skillet or wok, heat sesame oil over high heat. Add beef and cook for 2-3 minutes, until browned. Remove from skillet.
  3. Add bell pepper, broccoli, and carrot to the skillet. Stir-fry for 5 minutes until tender-crisp.
  4. Add green onions, ginger, and hoisin sauce, and return beef to the skillet. Toss to combine, cooking for another 2 minutes.
  5. Serve with rice or noodles, and garnish with sesame seeds.

Variations:

  • Vegan: Use tofu instead of beef.
  • Low-sodium: Use low-sodium soy sauce and reduce hoisin sauce.
